Here are some of my favorite recipes to try at home.

Sylvia's Lazy-but-Good Beef Curry

🍽️ Servings: About 3 meals for one Sylvia ⏱️ Prep: ~20 minutes 🔥 Cook: ~50 minutes

Ingredients

  • Ground beef, 1 pound
  • White onions, >= 1
  • Asparagus, 1 bunch (or your favorite veggies)
  • White pepper
  • Black pepper
  • Mango habanero blend (optional)
  • Parsley (optional)
  • Paprika
  • Garlic powder
  • Onion powder
  • Salt
  • S&B Golden curry (recommend HOT because mild is not spicy at all...)
  • A big Dutch oven (or wok/big pan)

Instructions

  1. Chop up the onions into big blocks
  2. Chop off the ends of asparagus (about 1.5 inches), and chop them into big sections (about 4 sections from 1 piece of asparagus)
  3. Put asparagus into a big bowl, sprinkle some garlic powder, onion powder, black pepper, paprika, and salt, and mix them up in the bowl
  4. Put the ground beef into another bowl (or you can move asparagus into the dutch oven to avoid washing yet another bowl), and sprinkle these generously: white pepper, mango habanero blend, parsley, garlic powder, and onion powder. Sprinkle a proper amount of salt too. Mix them up well
  5. Pour a small amount of oil into your dutch oven, put the asparagus in, and sauté them with medium-high heat for about 5 mins or until they look less raw
  6. Put the ground beef and onions into the dutch oven, and sauté them all together until at least 50% of the onions have caramelized, or just for 7-10 mins for efficiency
  7. Pour water in until the materials are mostly submerged (about 80-90%), cover the dutch oven with a lid, use medium-high to high heat to cook for about 10 mins, or until boiling and wait for another 1 minute
  8. Take out one big block of golden curry (4 small blocks connected together), break them up and distribute them evenly in the dutch oven. Put the lid back on, turn heat lower to medium or medium-low, and cook for another 10-15 minutes, or until the curry has well blended into the food. Check every 2-3 minutes and stir the food so that they don't stick to the bottom much
  9. Remove the lid, let the food cook openly for another 5 minutes or until the water has evaporated enough, and the curry is thick. Keep checking and stirring every minute to avoid food sticking to the bottom too much or even get burned
  10. When it looks good, give it a taste and see if you need to add more seasoning (if you do add more, make sure to mix it in well and stir for a minute). Then it's ready to serve!
